I wonder if you have ever investigated the management of Parkinson's with a Keto diet? If not I think it might be of some interest. Dr Stephen Finney and Dr. Paul Mason are a good place to dive in. The scheme would be even better if you could use you own phone / watch to do the measurement - e.g. integrate it with the rest of the data in Apple health, where there's already gait, sleep tracking, weight, exercise record, etc. Part of this to scale the treatment to the individual as described, part to help measure progression, part to help figure out what adjustments to sleep / diet / exercise impact on symptoms. I imagine there's a calibration challenge - but in large part what you're after is changes over time rather than an absolute measure, and so precise calibration matters less than consistency. Frequency of measurement ought to squeeze noise out of the data set too - better to have an "always on" measurement than one that you try every six months or so...
